Amazing vegetarian enchiladas stuffed with black beans, broccoli, bell pepper and spinach, topped with homemade red sauce. My favorite enchilada recipe! Recipe yields 8 enchiladas, enough for about 4 servings.

  • 5 cups 5 to 6 ounces baby spinach
  • 1 can Black beans
  • 1 bunch Broccoli
  • 1 Handful Cilantro
  • 1 Red bell pepper
  • 1 cup Red onion
Baking & Spices
  • 1 Black pepper, Freshly ground
  • 1/4 tsp Frontier co-op ground cinnamon
  • 1/2 tsp Salt
Oils & Vinegars
  • 2 tbsp Olive oil
Nuts & Seeds
  • 1 tsp Frontier co-op ground cumin
Bread & Baked Goods
  • 8 Tortillas, whole wheat
Dairy
  • 1 cup Monterey jack cheese
Prepared
  • 2 cups Enchilada sauce, homemade
