Ingredients

Produce

  • 1 cup Green peas
  • 1/2 cup Mint, leaves

  • 6 Onion chopped into julienne
  • 4 Onion chopped into julienne, medium sized
  • 3 Potatoes chopped into chunks, medium sized wedges
  • 3 Tomatoes chopped finely
Condiments
  • 2 tbsp Lime juice
Pasta & Grains
  • 2 cups Basmati rice
Baking & Spices
  • 7 cloves 4-5 green cardamom, green
  • 4 tsp Caraway seed
  • 3 Cardamom, black
  • 7 Cardamom, green
  • 1 Cinnamon stick
  • 7 Clove
  • 1 1/2 tbsp Garam masala powder or biryani masala powder
  • 4 Mace strand
  • 2 pinch Nutmeg, powder
  • 15 Peppercorn
  • 1 tsp Red chili powder
  • 1 tsp Salt
  • 1 Salt as per taste
  • 1 Salt as required
  • 2 Star anise
  • 1 tsp Sugar
  • 1/2 tsp Turmeric
Oils & Vinegars
  • 6 tbsp Ghee or vegetable oil
Dairy
  • 1 cup Yogurt beaten until, smooth
Other
  • few drops of color optional 2 tbsp more ghee for layering rice
  • 150 g Ms long brinjal chopped length wise (optional)
  • 2 3 nagkesar 2-3 stoneflower
  • few drops of vetiver essence
