Savoury, fruity, slightly sour and refreshingly spicy, orange beef stir-fry is a comforting dish that can be easily prepared in your own kitchen.




Ingredients
Gluten free
Meat
  • 350 g Flank or skirt steak
Produce
  • 3 Chilli, fresh
  • 3 cloves Garlic
  • 1 tsp Ginger
  • 1/2 Orange, Zest of
Condiments
  • 2 tsp Soy sauce, light
  • 1 tsp Soy sauce, dark
Baking & Spices
  • 2 tsp Cornstarch
  • 1 pinch Salt
  • 1 pinch Sichuan pepper, ground
Oils & Vinegars
  • 2 tbsp Cooking oil
  • 1/2 tsp Sesame oil
Drinks
  • 4 tbsp Orange juice, fresh
Beer, Wine & Liquor
  • 1 tsp Shaoxing rice wine


Instructions
  1. Place beef strips in a bowl. Add ingredients for the marinade. Mix well until all the liquid is absorbed by the beef. Leave to combine for 10 minutes.
  2. Mix the sauce then set aside.
  3. Heat up a wok (or a deep frying pan) over a high heat then pour in 1.5 tablespoons of oil. Sear the beef until it becomes pale. Dish out and set aside.
  4. Discard any liquid in the wok. Pour in the remaining 0.5 tablespoon of oil. Add orange zest, fresh chilli, ginger and garlic. Cook until fragrant then stir in the beef. Fry for 1 minute or so. Pour in the sauce (stir well beforehand). Dish out when beef is evenly coated with the thickened sauce.
  5. Serve warm with plain rice.
