Vegan mini pizzas are crispy, full of texture and flavour. The dough is made a day in advance and stored in the fridge or can used from frozen.



Ingredients
∙ Makes 20 small mini pizzas
Produce
  • 30 g Baby rocket / arugula, fresh
  • 10 Cherry tomatoes
  • 2 Courgettes, small
Condiments
  • 15 Black olives
  • 1 Favourite tomato sauce
  • 1 Favourite vegan pesto
Baking & Spices
  • 500 g High-gluten all-purpose or bread flour
  • 10 g Salt
  • 1 Salt & pepper
  • 1 Semolina flour
  • 1 tsp Yeast, instant dried
Oils & Vinegars
  • 4 tbsp Olive oil
Nuts & Seeds
  • 1 tbsp Pine nuts, raw
Dairy
  • 1 chunk Cheese, vegan
Liquids
  • 300 ml Water
Other
  • ½ tsp pul biber (mild chilli flakes)
