This Mexican Cauliflower Rice is packed with veggies, protein, and lots of flavor and spice! It's topped with an easy guacamole and chipotle ranch sauce for a tasty, filling meal that's Paleo



Ingredients

Meat
  • 1 lb Ground beef
Produce
  • 1 head 12 oz riced cauliflower
  • 1 Avocado, large ripe
  • 1 generous dashChipotle pepper adjust to your taste
  • 1 Cilantro
  • 2 tbsp Cilantro, fresh
  • 1 clove Garlic
  • 3 Garlic cloves
  • 1/2 tsp Garlic powder
  • 1 can Green chilis
  • 1 Jalapeno pepper
  • 1 tbsp Jalapeno peppers
  • 2 tbsp Onion
  • 1/2 tsp Onion powder
  • 1 Red bell pepper
  • 1 Yellow onion, small
Condiments
  • 1/2 cup Chipotle ranch dip, homemade
  • 1 1/2 tbsp Lime juice, fresh
Baking & Spices
  • 1 tsp Chili powder
  • 1/2 tsp Sea salt, fine grain
Nuts & Seeds
  • 1 tsp Cumin
Other
  • 3 Tbsp cooking fat (coconut oil, bacon fat, olive oil, ghee, divided)
  • 1 batch Easy guac (see below:)
